They can be paired with various sides to create a complete and satisfying meal. In this recipe, I’ve paired them with wine-soaked mushrooms, roasted red pepper hummus, and a simple Greek salad. Ingredients (Makes 4 Servings):



Chicken:

  • 1 lb boneless, skinless chicken breast

  • 1Tbsp apple cider vinegar

  • 2 Tbsp plain yogurt

  • 1 Tbsp lemon juice

  • 1 tsp ground cardamom

  • 1 Tbsp extra virgin olive oil

  • 1 tsp each of paprika, cayenne pepper, chili flakes, garlic powder, salt, pepper, and thyme


Mushrooms:

  • 1 lb mushrooms

  • 2 cloves garlic, minced

  • 1 Tbsp olive oil

  • 1/4 cup red wine

  • Salt, pepper, and parsley to taste


Roasted Red Pepper Hummus:

  • 1 cup cooked chickpeas

  • 2 fire-roasted red peppers (jarred or freshly grilled)

  • 1 clove garlic

  • 1 Tbsp tahini

  • 1 Tbsp lemon juice

  • 1 tsp cumin

Directions:


Chicken:

  1. Cut the chicken into cubes.

  2. In a bowl, mix the apple cider vinegar, plain yogurt, lemon juice, cardamom, olive oil, paprika, cayenne pepper, chili flakes, garlic powder, salt, pepper, and thyme.

  3. Add the chicken cubes to the marinade, ensuring they are well-coated. Marinate for at least one hour.

  4. Thread the marinated chicken onto skewers.

  5. Grill the skewers for 8-10 minutes, turning occasionally, until the internal temperature reaches 165°F.

Mushrooms:

  1. In a skillet, heat the olive oil over medium heat.

  2. Add the minced garlic and cook until browned.

  3. Pour in the red wine and season with salt and pepper.

  4. Once the mixture starts to simmer, add the mushrooms.

  5. Cook the mushrooms until they are golden brown.

  6. Garnish with chopped parsley.

Roasted Red Pepper Hummus:

  1. In a blender, combine the chickpeas, roasted red peppers, garlic, tahini, lemon juice, and cumin.

  2. Blend until smooth, adding some of the chickpea water gradually to achieve the desired consistency.
