Ingredients (makes 2 servings):

  • 1 cup pear fruit in 100% juice (about 1 medium pear)

  • 2 slices whole-grain toast

  • 1.5 cups skim ricotta

  • 1 tsp ground cinnamon

Directions:



  1. Add the ricotta, ¾ of the pears (minus the juice), and a dash of cinnamon in a blender or food processor. Blend until smooth and creamy.


  2. Transfer the whipped ricotta into a piping bag or a zip-top bag. Refrigerate for 10 minutes to help it hold its shape.


  3. Toast the bread. Pipe the whipped ricotta generously over each slice.


  4. Garnish with the remaining pear slices and sprinkle with cinnamon. Enjoy!
