Last week I posted the Mediterranean Diet Produce Guide for February and one of my favorite roots on the list is beets. These stunningly gorgeous deep-red gems are the perfect shade of winter. This salad is a great side dish for your balanced meal. I would pair it with your favorite white fish.

1 cup Arugula
1 medium Roasted beets, sliced
1/4 cup Goat cheese, crumbled
1/4 cup Walnuts, toasted and chopped
Honey Dijon dressing: equal part honey, olive oil, and Dijon mustard
Black pepper
Green onions for garnish
